Mango Margarita Popsicles
Blended, up, or on the rocks, I love a good margarita. It’s the type of cool and refreshing cocktail that fits perfectly with summer. For an extra icy kick, I love freezing margaritas into popsicles. What could be better than a frozen margarita on a stick?!

For this margarita popsicle, I tweaked my blended mango margarita recipe and froze the mixture in paper cups. It’s just that simple to make summertime poptails. Margarita Popsicles
Mango Margarita Popsicle Recipe
1 cup chopped fresh ripe mango
2 ounces (1/4 cup) water
1 1/2 ounces (3 tablespoons) blanco or reposado tequila
1/2 ounce (1 tablespoon) clear orange liqueur such as Cointreau
1 ounce (2 tablespoons) fresh lime juice
1 to 2 tablespoons light agave nectar
Paper cups or popsicle molds
Foil squares
Wooden craft sticks

Add mango, water, tequila, orange liqueur, lime juice and agave nectar to blender container. Cover and blend until smooth.

Divide mixture among 4 (5-ounce) paper cups. Cover cups with foil; insert craft stick. (Or, use a popsicle mold.) Freeze about 8 hours or until frozen. To serve, tear away paper cups. Garnish with lime slices.

Makes 4 boozy popsicles

Tip: The amount of agave nectar needed depends on the sweetness of the mango and personal taste. Start by blending in 1 tablespoon and add more as needed. If you don’t have agave nectar, simple syrup can be substituted.
